COOKING SCHOOL
At one end of a large
terrace, sheltered from the sun by awnings, are the stove tops and kitchen work surfaces, at the
other end amongst pots and vases spilling over with flowers and
herbs is a table elegantly laid with sparkling crystal and fine cutlery and
linen, waiting to be graced with fine wines and the delectable speciality
prepared and cooked by students under the expert supervision of Diana Folonari
and her staff. Such is the setting of the Italian Country Cooking Classes in
Diana Folonari’s white washed villa in Positano, which overlooks the
Mediterranean and melts into the cliff surrounded by Villas palms trees and
magnolia. Positano is situated on the world famous Amalfi Drive and is the
ideal setting to learn and create delicious dishes of the local Italian
cuisine.
This Italian
cuisine is sought after around the world for it’s recipes of veal, chicken and
fish, as well as the country cooking of seasonal vegetables, many pasta dishes
and the use of
fresh fruits. The Class includes several of the more famous Italian
recipes, as well as unique presentations of local specialities not usually known
outside Italy. The students learn,
in small classes,
to prepare, cook, and experience all of these delectable tastes. Students
will also have special sessions on Italian wines, for each of the various
courses discussed, as well as being taught the secrets of the use of Italian
herbs, oils, condiments and seasonings. Diana Folonari is careful to only teach
those recipes that her students will be able to prepare for family and friends
back home.
There
is no better place to enjoy a leisurely vacation. During free time, one can
explore the ancient ruins of Pompei or Ercolano, experience the charm of the
island of Capri, visit Amalfi, and the Greek temples of Paestum, the villa in
Ravello where Wagner composed, the Kings Palace in Caserta and many other
fascinating places; or just relax and soak in the sun and swim or wander through
Positano exploring the ceramic shops, boutiques and
bars.
